Thank you for your interest in franchising with Jugem! The concept to the Japanese restaurant was founded by Taku Ino, who grew up eating Coedo Curry with his grandmother and dreamed of sharing the dish with his community. After years of serving his great-grandmother’s curry in his grocery store and receiving enthusiastic feedback, he opened Jugem to bring authentic, historically rooted Japanese cuisine to the U.S. market. Entrepreneurs seeking a distinctive and culturally rich restaurant opportunity will find Jugem uniquely positioned in the growing Japanese cuisine segment. The Japanese restaurant industry in the United States is growing at a compound annual growth rate of 3.28% annually, with a strong consumer demand for authentic, regional dishes beyond sushi and ramen. As American diners increasingly seek health-conscious, story-driven culinary experiences, Jugem’s revival of the 1897 Coedo Curry recipe—restored by descendants after being lost for decades—offers both rarity and depth. With a compelling brand narrative, a proprietary high-nutrition curry roux, and a growing appetite for authentic Japanese flavors, Jugem stands out as an ideal franchise investment for those ready to enter a thriving and expanding market.

Concept
Jugem is a Japanese restaurant concept built on heritage, community, and a passion for authentic cuisine. Inspired by the meals he shared with his grandmother, founder Taku Ino set out to bring Coedo Curry—a dish with deep cultural roots—to his local community. After years of serving the curry in his grocery store and receiving overwhelmingly positive feedback, Taku opened the first Jugem location to offer guests a unique, comforting dining experience centered on a rare and historic Japanese recipe. Coedo Curry was originally founded in 1897 in Kawagoe, a culturally significant city in the Greater Tokyo Area, and was widely enjoyed alongside traditional dishes like Sukiyaki. The original recipe, lost after the founder’s death, was rediscovered in 2021 by his descendants and is now served exclusively at Jugem. The restaurant’s name, meaning "limitless life" in Japanese, reflects its mission to promote happiness, wellness, and longevity through its highly nutritious curry, made from a proprietary roux combining beef and vegetables. With a focus on creating warm, welcoming spaces and sharing an authentic taste of Japanese history, Jugem offers a rare culinary experience not commonly found in the U.S. dining scene.
Offering
Entrepreneurs seeking a distinctive and culturally rich investment opportunity should consider franchising with Jugem. The North American Japanese restaurant market is experiencing steady growth, valued at $5.11 billion in 2024 and projected to reach $6.59 billion by 2032, growing at a CAGR of 3.28%. This expansion is driven by increasing consumer interest in authentic and health-conscious dining options. Jugem stands out by offering Coedo Curry, a unique dish with deep historical roots dating back to 1897, providing a rare culinary experience not commonly found in the U.S. With a total investment ranging from $145,000 to $330,000 and an initial franchise fee of $40,000, Jugem presents a compelling opportunity for entrepreneurs to enter a growing market with a distinctive and culturally significant brand.
Training
Franchisees who join Jugem will receive comprehensive training designed to ensure a confident and successful launch. The training program includes 8 hours of classroom instruction covering essential topics such as business operations, brand standards, food safety, and customer service. In addition, franchisees will complete 14 hours of hands-on, on-the-job training at an operating Jugem location. This immersive experience allows franchise partners to gain practical skills in preparing Coedo Curry, managing day-to-day tasks, and creating the welcoming, culturally rich atmosphere that defines the Jugem brand. Together, the training equips entrepreneurs with the knowledge and confidence needed to maintain quality and consistency across every Jugem location.
